Susan Elizabeth Sarantapoulas, 66, of The Villages, Florida, passed away peacefully in her home on May 8, 2025. She is predeceased by her beloved son, Brendan John Bjorkback (November 22, 1979 – February 25, 2022).
Susan is survived by her devoted and loving husband, Peter Sarantapoulas, whom she met on a birthday night out with friends. Together, they built a beautiful blended family that brought joy and meaning to their lives. She is also survived by her son James and his partner Jordan of Casselberry, FL; her daughters Dionne of Middletown, NY, and Lisa and her husband Balo of Lakewood, CA. Susan is also remembered by her mother, Elizabeth Bjorkback-Peto of Johnsburg, IL; her siblings Michael, Eric, Teresa and her husband Michael, Sharon and her partner Keith, and David and his wife Sandy.
Her cherished grandchildren include Ryan, Arianna, and Evan of New York; Amanda, Ashley, Crystal, Joe, and Rosalia of New York; and Anthony, Angela, Christian, Matthew, and Samantha of California. She was also blessed with many beloved great-grandchildren: Isabella and Jason; Frank and Violet; Johnathan, Dylan, Aiden, Alana, and Hailey; and Lucy, Jack, and Ryan—as well as many extended family members and dear friends.
Born in Maryland, Susan spent her childhood living in Oklahoma, Texas, and New Jersey before settling in New York, where she graduated from Suffern High School in 1977. She worked at Amscan in New York for over 20 years where she made many friends, before retiring and moving to Florida with Peter.
Susan lived a full and happy life surrounded by friends, family, former classmates, coworkers, and new acquaintances. She had an extraordinary memory for details, always remembering birthdays, anniversaries, and special dates—even those from her early childhood.
Known affectionately as "Little Sue," she may have been small in stature, but her presence was larger than life. She had a true zest for living—always looking forward to her next trip, whether it was visiting family across the country or setting sail on a Caribbean cruise with friends. She rarely passed up a concert or movie and delighted in recounting her favorite bands and films. With an eclectic taste in music, she seemed to know the lyrics to every song by heart.
Susan expressed her creativity through painting ceramics, crafting whimsical figures, and collecting lighthouse memorabilia. Her hobbies were as varied as her personality—from bingo and swimming to bocce ball and dancing to live music in the town squares of The Villages.
She brought joy, energy, and kindness wherever she went. Her absence will be deeply felt, and her memory will live on in the hearts of all who knew and loved her.
